Rice Pudding with Jaggery ( Paramannam )

Ingredients.

  1. Rice
  2. Jaggery
  3. Milk
  4. Condensed Milk ( Optional )
  5. Nuts & Raisins
  6. Cardamom Powder
  7. Ghee

Procedure.

Step 1.

wash 1 small cup of rice and pressure cook it for 3 whistles with 3 cups of water.

Step 2.

When pressure goes down again keep it on stove add,1 cup milk & jaggery according to your taste and mix it well.

Step 3.

Heat ghee in a pan fry raisins and nuts in ghee till it changes to golden in colour and add it to the rice and mix it well with rice.Add some cardamom powder to it and dish is read.Add more ghee for taste, use less milk & jaggery if you use condensed milk.This pudding becomes more lumpy in consistency when it cools down.

Ghee Rolls

Ingredients

  1. Chapathis
  2. Ghee
  3. Sugar

Preparation.

Step 1.

Take one chapathi apply 1 tsp of ghee over all, when it is on pan itself as chapathi will be hot.

Step 2.

Spread sugar over all the ghee and roll it as you can see in the picture below. As chapathi will be hot, it melts the sugar in ghee.

Step 3.

Now with sharp knife cut into pieces. If you want  you can have roll like that itself. Your Ghee rolls are ready to serve.

Fruit Salad & Ice Cream with Chocolate Sauce

Ingredients

  1. Vanilla Ice Cream
  2. Banana
  3. Apple
  4. Chocolate sauce

Preparation

Step 1.

Chop Banana and apples into small chunks and add it in a Dessert Bowl, then 1 layer of ice cream, then fruits.

Step 2.

You can use any type of fruits you like, but banana goes very well with ice cream.

Step 3.

Now add a tsp of chocolate sauce and serve it. If ice-cream melts slightly it will really be yummy.

Vermicelli (Semiya) Payasam

Ingredients

  1. Vermicelli (Semiya)
  2. Sugar
  3. Cashew Nuts
  4. Almonds
  5. Ghee
  6. Milk

Ingredients.

Step 1.

                                Chop Dry Fruits and Fry it  in a tsp of Ghee as you can see in the picture.

                                                     Add 1/2 cup of Vermicelli to dry fruits and roast it in ghee until slightly brown in colour.

 

 

Step 3.

Add  1/4 cup of water to vermicelli and bring it to boil, then add 1 cup of milk at this stage because it prevents milk from curdling and let that come to boil.

Now add 1/2 cup sugar to 1/2 cup vermicelli and bring it to boil.

Sweet Biscuits

Ingredients

  1. Maida (All Purpose Flour)
  2. Baking Soda
  3. Milk
  4. Sugar
  5. Ghee
  6. Oil

Preparation

Step 1.

Mix  1 cup of Maida with 2 pinch’s of baking soda.

Step 2.

Dissolve sugar in milk  and see that milk should be sweet enough to kneed the flour.

Step 3.

Add  1tsp of hot ghee to 1 cup  of Maida and rub with your hands so that no lumps are formed in the flour, now knead the flour with sweet milk.

Step 4.

You have to knead the dough for longer period because kneading the sweet dough will give the good texture to biscuits as it wont crumble.

Step 5.

Take a small piece of dough and roll out with rolling pin and cut into small diamond shapes, and repeat the same process with the remaining dough.

Step 6.

Heat oil in a pan for deep frying and add biscuits, fry till golden colour and take out on a tissue paper.

Step 7.

Sweet biscuits are ready.

Sweet with wheat flour (Thadukala pasham)

Ingredients

  1. Wheat flour (Godhuma Pindi)
  2. Sugar
  3. Milk
  4. Cashew nuts (kaju)
  5. Almonds (Badam)
  6. elaichi Powder
  7. Pista
  8. Ghee

Preparation

Step 1.

Take 2 tbsp of wheat flour and knead into dough with milk mixed with sugar, so that the dough becomes sweet.

                                         Now roll the sweet dough into long string as  seen in above picture and divide into 3 inch long and sprinkle  dry flour on it and keep it aside as seen in the picture beside.

 

step 4.

Take a deep pan and add enough water so that sweet strings gets boiled and let them boil, in the mean while we have take 1 cup dry wheat flour and mix it with 3 cups of water like batter without lumps.

Step 5.

When you feel that  sweet strings are boiled enough, add  wheat flour batter and keep it in low flame and let it boil for 10 to 15 mins, for this we need to keep on stirring so that no lumps are formed.

Step 6.

Chop dry fruits into small pieces and fry them in ghee and keep it aside so that we can add it later.

Step 7.

Now add 1 cup of sugar for 1 cup of wheat batter and mix well, it should always cook in low flame, now add  2 tbsp of ghee to sweet and add fried nuts, elaichi powder and stir it, let it cook for more 10mins.

Step 8.

Now your tasty tasty thadukala pasham ready, We usually prepare this for special occasion on our vinayaka chavithi festival.

Rice Pudding (chakkara pongali)

Ingredients

  1. Rice
  2. Sugar (chakkara)
  3. Milk
  4. Cashew nuts (kaju)
  5. Almonds (Badam)
  6. Elaichi Powder
  7. Ghee

Preparation

Step 1.

Wash rice and add 2 cups of water for 1 cup rice and soak it for 20 mins.

Step 2.

Cut nuts into small pieces and fry it in  2 tbsp of ghee until it gets golden brown in colour and keep it a side.

Step 3.

Boil the rice under medium heat until water is absorbed, then add 1/2 cup milk and mix it well, let that cook for some time, now add 1 cup of sugar to rice and mix well until sugar gets melt.

Step 4.

Add elaichi powder and dry fruits along with ghee  to pudding and give a quick mix.

Step 5.

Your Rice pudding is ready. This rice will be thick and lumpy form not in running consistency. To make it running consistency add more milk to it and boil it.
