- Spinach ( Palakura )
- Bottle Gourd ( Sorakaya )
- Green Chillies
- Ginger & Garlic Paste
- Chilli Powder
- Coriander Powder
- Coconut Powder ( Optional )
Chop Bottle Gourd & Spinach and keep it aside.
Heat 3 tbsp of oil in a pressure cooker or normal sauce pan and add 2 finely chopped onions, 3 to 4 Green Chillies and fry them till they become transparent then add 1/4 tsp of turmeric and 1/2 tsp of G & G paste and fry them for a while.
Now add 1 cup of bottle gourd and 2 cups of chopped spinach and give a quick stir and close the lid and simmer it for some time.
Now add 1/2 tsp of chilli powder, stir it and let it cook. When you feel its done add 1/2 tsp of coriander powder, 1/4 tsp of coconut powder and let it simmer for 2 min and its done.
You can fasten your process in pressure cooker for 1 whistle and later reduce it till you get thick in consistency. In normal pans its takes time to cook bottle gourd as we cook it in medium flame.
Curry is ready. We can serve it with chapathis and steamed rice.
