- Maida (self raising flour)
- Icing Sugar (Sugar powder)
- Cashew Nuts (kaju)
- Almonds (Badam)
- Vanilla Essence
- Baking powder
- Baking Soda
Sieve 1 cup Maida, 2 tbsp baking powder, 1/4 tsp baking soda so that everything get mixed up well.
Chop cashew nuts and almonds into small pieces and shallow fry it in butter so that they are slightly brown in colour and keep it aside.
Melt 1 cup butter, add 1 cup sugar and keep on stirring with your hands or with hand mixer until sugar and butter gets well together, now add 1 well beaten egg to this mixture and mix it well.
Now add mixed Maida with baking powder, soda to the above melted butter mixture and mix it well, add a pinch of salt, 1 tsp vanilla essence, add few tsp of milk if necessary.Mix it well with hand mixer.
Now add nuts to the mixture only after all the mixture gets mixed up well, once nuts are added to to cake mixture we cannot mix more because of nuts.
Take the baking tray and place butter paper cups on it and add cake mixture to cups as shown in picture below
pre heat the oven and place the baking tray in the oven for 15 to 20 mins at 190c
Baking time may differ from oven to oven so do check in between and insert a tooth pick if it comes out clear then its an indication that cake is done.
So your dry fruit muffins are ready
