Besan or Pitla For Dosa & Puri

Ingredients.

  1. Besan
  2. Aloo
  3. Oil
  4. Mustard Seeds
  5. Cumin Seeds
  6. Onions
  7. Green Chillies
  8. Curry Leaves
  9. Tomatoes
  10. Turmeric
  11. Chilli Powder ( Optional )
  12. Coriander Leaves
  13. G & G Paste

Preparation.

Step 1.

Heat 4 tbsp of oil in a pan and add mustard seeds, cumin seeds, onions, green chillies and fry them untill they are soft. Then add G & G paste, turmeric, curry leaves, salt, aloo, and fry untill soft and tender.If we want we can add chilli powder, but if we add chilli powder color changes slighly to red, so we can skip chilli powder and add green chillies.

Step 2.

Now add water and let it come to boil in the mean while take besan and dilute it with water without lumps. At this stage add tomatoes to boiling water, if we add tomatoes at this stage we can see it as chunks in besan. Now add besan batter to this boiling water a stir it continiously so that no lumps are formed . We should check the consistency we want and let it boil for 10 mins till the besan is cooked. Now sprinkle coriander and its ready to serve with dosa or puri.

It goes very well with bhatura also

We usually make it for dosa as it is perfect combination for dosa.

Kanda Bachali Kura ( Andhra Special )

Ingredients.

  1. Kanda
  2. Bachali Kura
  3. Green Chillies
  4. Chilli Powder
  5. Tamarind Pulp
  6. Mustard Seeds
  7. Fenugreek Seeds
  8. Mustard Powder
  9. Cumin Seeds
  10. Chana Daal
  11. Urad Daal
  12. Curry Leaves
  13. Red Chilles
  14. Ginger
  15. Oil

Preparation.

Step 1.

Peal and wash kanda and cut it into chunks and boil it with some salt, water and turmeric.

Step 2.

Wash and cut the bachali kura as you can see in the pic

Step 3.

Boil bachali kura with some water in microwave for 5 mins and keep it a side.

Step 4.

Now mix both Kanda and Bachali kura together and keep it a side. Kanda should not be mashed fully, it should be a bit chunky form.

Step 5.

Heat oil in a pan and add few fenugreek seeds and mustard seeds, cumin seeds,dry red chillies and let it fry then add chana daal, urad daal and ginger & green chilli paste, turmeric and fry them.Now add mustard powder, tamarind paste ,curry leaves,chilli powder,salt and give a quick stir and fry for a while. Then add Kanda and bachali kura and mix it well , if needed add some water and let it come to a boil then curry is ready to serve.

It goes very well with roti or rice with nice mustard flavour.

Nachoes sizzler

Ingredients.

  1. Tortilla chips
  2. Onions
  3. Green Chillies
  4. Jalapenos
  5. Salsa
  6. Cheese

Preparation

Step 1.

Arrange tortilla chips in a plate or sizzler plate then add salsa on all chips and finely chopped onions, green chillies, jalapenos as you can see in the pic .

Step 2.

Now add cheese on it

Step 3.

Microwave it untill cheese gets melted , if it is sizzler then place it in oven under grill mode untill cheese gets melted for 6 to 10 mins at 180c. Now your nachoes are ready to serve .

It taste yum with cheese and chunks of veggies…

Chole Bature With Mango Blast (Chole type 2 )

Ingredients

  1. Chole
  2. Cinnamon
  3. Cloves
  4. Elaichi
  5. Onions
  6. Green Chillies
  7. Curry Leaves
  8. Turmeric
  9. G & G Paste
  10. Tomatoes
  11. Tamarind Pulp
  12. Chole Masala
  13. Oil
  14. Cumin Seeds
  15. Chilli Powder

Preparation

Step 1.

Soak chole over night and boil it with some salt and turmeic and keep it a side.

Step 2.

Heat oil in a pan and add a small piece of cinnamon , 1 elaichi ,3 cloves and 1/2 tsp of cumin seed and let it fry then add finely chopped onions and 2 slit green chillies and fry them untill they turn slightly brown in color then add turmeric, 1/2 tsp of g & g paste, tomatoes and fry a bit.

Step 3.

Now add all spices like salt , chilli powder , chole masala and give a quick stir then add boiled chole and cook it for a while then add tamarind pulp, curry leaves and some water then let it boil for a while. Now chole is ready to serve.

Chole goes very well with bature

Tomato Soup ( Healthy )

Tomato Soup

Ingredients

  1. Tomatoes
  2. Onions
  3. Carrots
  4. Cinnamon Powder
  5. Chilli Powder
  6. Salt
  7. Butter/ Olive oil
  8. Garlic cloves
  9. Bay leaves
  10. Black Pepper
  11. Beetroot
  12. Bell peppers

Preparation

Step 1.

Heat butter in a pan and add bay leaf garlic and stir it and add a small portion of onions and carrots then a piece of beetroot for natural color and fry it then add red and green bell pepper then add tomatoes and fry it. Now add salt, chilli powder , black pepper , cinnamon powder , and cook it untill its soft and tender.

Step 2.

Once its cooled then blend it to a smooth paste by discarding bay leaf .Now we need to strain it so that we get smooth pulp then add some water and bring it to boil. Check the seasoning salt and pepper powder, if we want want we can make it thick by adding corn flour slury but i did not added. To make it rich add cream and serve it with a piece of butter bread or pav.

Whole Wheat Bread Rolls

Ingredients.

  1. Wheat Flour
  2. Active Dry Yeast
  3. Salt
  4. Sugar
  5. Olive Oil
  6. Milk
  7. Milk Powder

Preparation.

Step 1.

Take 1/2 cup of warm milk and add 1tsp sugar and 1 tsp of yeast and let it sit for 15 mins to get activated. Then take 1 cup of flour add salt , 2 tsp of olive oil, 1tbsp of milk powder and kneed the dough with activated yeast mixture for 15 mins. With help of additional water kneed it to a stickly dough and coat it with olive oil and rest it for 2 to 3 hours.

Step 2.

By this time you can see the dough becomes dauble or more in size then punch it and kneed it with some extra flour and make it into rolls and place it on baking tray and cover it with kitchen towel and rest it for 45 min more to raise . Take 2 tbsp of milk mixed with sugar and give a milk wash on rolls before baking to get nice color on rolls

Step 3.

Pre heat the oven for 10 mins at 220 c and bake it for 15 mins untill you see nice color on it. and remove it from oven and slightly give a butter wash so that we can see nice shine on it and cover it with lid so that it becomes soft.

These rolls goes very well with soups, salads, and sandwiches. This recipe is same as my pav recipe but made of wheat flour and shape difference as you can see in the pics below. The first pic is made of maida and shaped it as pav and they are attached to each other.

This bread is made of wheat flour and i gave it a shape of rolls like hot dog. This bread can be stuffed as hot dogs with any fillings and it is healthy too as it is made up of wheat flour completely.
